I hope you’re starting to think about grilling! Last weekend I shared a new collection of Amazing Low-Carb and Keto Beef Steak on the Grill, and today I’m reminding you about this wonderful recipe for Grilled Halloumi Cheese with Mushrooms. If you’re going to be breaking out the grill over the weekend, this would be an ultra tasty and fun idea to try.

I came up with this recipe when I had a block of Halloumi in the fridge and some mushrooms that needed to be used up, and that was all the inspiration I needed! I marinated the cheese, mushrooms, and onions for a few hours in a mixture with Mediterranean flavors; then threaded them on to my favorite double skewers and grilled them.

The only thing that’s at all difficult about cooking the skewers on the grill is making sure you use oil or non-stick spray right before you put the skewers on so the melting cheese doesn’t stick. And if you’ve never had grilled Halloumi before, I’m thinking you’re going to love this recipe; hope you try it!

What ingredients do you need for this recipe?

  • 8 oz. brown mushrooms
  • sweet onion
  • Halloumi cheese
  • Pam for Grilling (affiliate link) or oil for grill (VERY IMPORTANT)
  • fresh squeezed lemon juice, I used my
  • red wine vinegar
  • olive oil
  • Greek Seasoning (affiliate link)
  • Spike Seasoning (affiliate link) or other all-purpose seasoning

What is Halloumi Cheese?

A few years ago I fell in love with Halloumi, a unique cheese from Cyprus that has a high melting point which allows it to be fried or grilled. The browned cheese is delightful, and although Halloumi is a bit of a budget splurge, it’s something I buy occasionally for a treat.

Can you make the Grilled Halloumi Cheese Skewers lower in carbs?

The highest ingredient here is the sweet onion, so if you want this recipe to be lower in carbs just use less onion or omit it completely.

What if you don’t have an outdoor grill?

If you don’t have an outdoor grill or it’s not grilling weather, you can cook the grilled Halloumi on a stove-top grill pan with ridges or it would be great cooked on a George Foreman Grill as well. (affiliate links) Remember the George Foreman Grill cooks both sides at once, so adjust the grilling time.

How to make Grilled Halloumi Cheese with Mushrooms:

  1. This first photo shows the Halloumi I find at Smiths in downtown Salt Lake.
  2. I picked out 8 oz. of mushrooms that were about the same size, removed the stems if they were long, and washed the mushrooms in a colander.
  3. I cut the sweet onion into chunks about the same size as the mushrooms.
  4. The Halloumi was also cut up into pieces about the same size.
  5. I mixed together lemon juice, red wine vinegar, olive oil, Greek Seasoning (affiliate link), and Spike Seasoning (affiliate link) to make a marinade and marinated the cheese, mushrooms, and onions in the refrigerator for a few hours.
  6. When you’re ready to grill, drain the cheese and veggies into a colander placed in the sink.
  7. Thread the ingredients on to skewers. Double Kabob Skewers (affiliate link) are perfect for this if you have them.
  8. Preheat the grill to medium-high and brush or spray with oil or Pam for Grilling (affiliate link) right before you put the skewers on the grill. (Be careful in case it flames up a little!)
  9. I cooked about 6 minutes per side, using a flat skewer to scrape the cheese away from the grill when I was ready to turn them.
  10. And after about 12 minutes total cooking time I had these lovely skewers with beautifully browned Halloumi, juicy mushrooms, and still slightly crisp but browned sweet onions.
  11. Grilled Halloumi Cheese Skewers with Mushrooms were a delicious treat that didn’t last long at my house!

Grilled Halloumi Cheese with Mushrooms would be delicious with Air Fryer Shrimp, Very Greek Grilled Chicken, Marinated Beef Kabobs, Grilled Chicken with White Barbecue Sauce, or Air Fryer Marinated Chicken Breasts.

Ingredients

Ingredients:

  • 8 oz. brown mushrooms
  • 1 small sweet onion
  • 8 oz. Halloumi cheese
  • non-stick grilling spray or oil (VERY IMPORTANT) to use on grill right before you put the skewers on.

Marinade Ingredients:

  • 3 T fresh squeezed lemon juice, see notes
  • 2 tsp. red wine vinegar
  • 2 T olive oil
  • 1 tsp. Greek Seasoning
  • 1/2 tsp. Spike Seasoning

Instructions

  1. Remove large stems from the mushrooms, wash with cold water, and let mushrooms drain in a colander while you cut other ingredients.
  2. Cut off both ends of the onion, and then cut the onion into chunks that are about the same size as the mushrooms. (Try to keep the onion layers together if you can.)
  3. Cut the cheese into pieces the same size as the mushrooms and onions.
  4. Whisk together the lemon juice, red wine vinegar, olive oil, Greek Seasoning (affiliate link), and Spike Seasoning (affiliate link) to make the marinade.
  5. Put the mushrooms, onions, and cheese pieces into a Ziploc bag and pour in the marinade.  Let ingredients marinate in the refrigerator for a few hours.
  6. When you’re ready to grill, make sure the grill surface is clean and then pre-heat to medium high while you thread mushrooms, cheese, and onions on skewers.
  7. Spray the grill with non-stick grilling spray or brush with a high smoke-point oil right before you put the skewers on.  (Be careful in case it flames up.)
  8. Grill skewers about 6 minutes per side, using a flat turner to scrape the cheese away from the grill if needed when you’re ready to turn them.  Serve hot.

Notes

I used my fresh-frozen lemon juice for this recipe.

Low-Carb Diet / Low-Glycemic Diet / South Beach Diet Suggestions:
Grilled Halloumi Cheese with Mushrooms would be suitable for low-carb and low-glycemic diet plans but use less onion if you prefer for even fewer carbs. I used the 8.8 oz. package of Halloumi to make four servings, which probably means this is a once-in-a-while-treat for the original South Beach Diet, but this is perfect for other low-carb diet plans.

Grandma Denny’s Homemade Ranch Dip

My Grandma Denny’s Homemade Ranch Dip was a Denny family favorite long before anyone heard of Ranch Dressing! And this family favorite Ranch Dip is a delicious low-carb and keto dip recipe and in my family this makes an appearance at every holiday gathering!

My Grandma Denny’s Homemade Ranch Dip is one of my favorite memories from childhood! As early as I can remember, my Grandma Denny made a fantastic dip that she served with carrots and celery as an appetizer at every family gathering. In those days we called Grandma’s homemade ranch dip just *Vegetable Dip* as if there was only one kind of dip that could possibly be served with veggies.

This was long before the introduction of Ranch Dressing to the American culinary scene, and obviously my Grandma Denny was ahead of her time, because  now people all over the country are eating Ranch Dip with veggies. And in my own extended family, there would never be a holiday gathering without this delicious homemade Ranch Dip on the table.

Of course there’s nothing wrong with making Ranch-Style Vegetable Dip using a package mix if that time-saver works for you. But my grandma’s Homemade Ranch Dip is a bit fresher tasting as well as being low in carbs, and if you usually use the mix but don’t have a package on hand I bet you’ll love my Grandma’s recipe.

Grandma Denny always used full-fat mayo and sour cream, but for anyone wanting lower fat you can obviously make this with reduced-fat products if you prefer. Or if you don’t like mayo, you might prefer the variation below for Greek Yogurt Ranch Dip, made with Greek yogurt and blended cottage cheese for a higher protein, lower-fat dip.

Can you make this dip with onion powder?

I love the flavor the grated onion gives to my Grandma Denny’s homemade ranch dip. But if you prefer or want to save time, just use 1 tsp. onion powder.

Can you make this homemade ranch dip with Greek Yogurt?

I sometimes make a variation of this that I call Greek Yogurt Ranch Dip that’s lower in fat and higher in protein. For that variation follow this recipe but replace the sour cream with one cup of cottage that’s blended in the food processor until it’s nearly smooth and replace the mayo with one cup fat-free Greek Yogurt. (This is the version I would make when I was strictly following the original South Beach Diet.)

Want a version of ranch dip with more texture?

You can make a variation of this homemade ranch dip recipe with a little chopped red onion, finely diced cucumber, and finely diced red pepper if you’d like a chunkier dip. I would use about 2 T of each.

How to Make Grandma Denny’s Homemade Ranch Dip:

  1. My Grandma always used Bon Appetit Seasoning Salt as the secret seasoning in her vegetable dip, but it’s no longer being made (sob!) If you still have Bon Appetit, use it, but now I use Beau Monde Seasoning (affiliate link). If you’re in Europe you can also use Trocomare Seasoning. (affiliate link)
  2. Grate a small amount of raw onion into a bowl.  (I use the large side of a box grater; don’t use a microplane grater which just turns the onion to liquid.)
  3. Add mayo and sour cream to bowl.
  4. Then add Beau Monde Seasoning and dried dill weed (affiliate link).
  5. Mix all ingredients together well with a whisk. You can use a food processor as well, but the whisk is quicker.
  6. Let the dip chill in the refrigerator for at least an hour or two for best flavor.
  7. Serve with raw vegetables like celery, sugar snap peas, bell pepper strips, jicama, radishes, broccoli, or cauliflower.
  8. This is also good with carrots or as a dip for baked sweet potato fries for those who don’t mind more carbs.
  9. I tested this out on my friend Robin and she gave it two thumbs up!

Weekend Food Prep:

Ingredients

  • 1 cup sour cream (see notes)
  • 1 cup mayo (see notes)
  • 1 tsp. grated onion
  • 2 tsp. dried dill weed
  • 2 tsp. Beau Monde Seasoning (see notes)

Instructions

  1. Grate onion into a bowl, using the large side of a box grater or flat grater (not a microplane grater.)
  2. Add all other ingredients to the bowl and stir together with a whisk (or you can use a food processor, but it’s not necessary.)
  3. Chill an hour or so before serving.

 

Notes

I only use Daisy full-fat sour cream and full-fat mayo for this recipe but if you prefer to make a lower-fat version of the recipe you can definitely use reduced fat sour cream and mayo.

My Grandma always used Bon Appetit Seasoning for this. When that was discontinued I started making it with Beau Monde Seasoning (affiliate link), which is almost identical in flavor.

This will keep in the refrigerator for several weeks. Nutritional information doesn’t include vegetables and is calculated on 1/4 cup serving size.
