I love the variety of colorful peppers in this Chopped Greek Salad with Peppers, but you can use all one color if that’s what you have. And every year I make this version of Greek Salad with peppers and cherry tomatoes when I don’t have any garden tomatoes yet.

When I went to Greece I noticed every little restaurant had a dish they called country salad or village salad, which had cucumbers, tomatoes, onions, green peppers, Kalamata olives, and Feta, and a dressing which always contained oregano. And then I started noticing that many of the salads like this in America didn’t have peppers.

But I love the peppers in this Chopped Greek Salad with Peppers, and this is a simple salad I’ve made over and over. And I like this pepper-loaded Greek salad variation so much that I’m reminding you about it for my Friday Favorites pick this week!

When I first made the chopped salad shown in these photos, it was too early for garden tomatoes so I used cherry tomatoes for the salad and replaced the green pepper with chopped orange, red, and yellow peppers which are loaded with anti-oxidants. I used all the colors or peppers because they were on sale, but you could use just one color and it would still be pretty. 

There’s no need to measure the ingredients for this type of salad, so you can vary the proportions of the various ingredients according to your own taste. But whatever you do, don’t skimp on the Feta Cheese! For me, that’s definitely the ingredient that makes any type of chopped Greek Salad such a wow!

Is this an authentic Greek Salad recipe?

I’m definitely not claiming this is an authentic Greek salad, but it’s a tasty variation on the type of salads I had in Greece. For me, this is the version I love to make in early summer when I don’t have garden tomatoes yet. And one of my favorite Salt Lake City Greek restaurants calls this combination Greek Salad and when it has lettuce added, they call it American Greek Salad. That works for me, and I do really like both this type of Chopped Greek Salad and the Americanized variation with lettuce.

I used a purchased salad dressing with some dried Greek oregano added for this easy salad recipe, but you could combine olive oil, lemon juice, oregano and salt and pepper if you wanted to make your own Greek dressing.

How to make Chopped Greek Salad with Peppers:

  1. Whisk the dried Greek oregano into 1/2 cup prepared vinaigrette dressing (or make your own homemade vinaigrette if you prefer.) I used Newman’s Own Olive Oil and Vinegar Dressing (affiliate link) which is really low in carbs.
  2. I used about a cup of grape tomatoes cut in half, but I’d like this salad even better with chopped tomatoes fresh from the garden.
  3. I’m starting to get a few garden cucumbers, but for this salad I used mostly small Persian cucumbers from Costco.
  4. I chopped the red, yellow, and orange bell pepper into bite-sized pieces. I’m not a big fan of raw onion in a salad, so I also chopped up some sliced green onions.
  5. I’m crazy about Kalamata olives, but if I was making this for picky eaters I might even use black olives from a can.  (That would make the salad even less authentically Greek, but it would still taste good!)
  6. I cut the Feta cheese into cubes about a half-inch square for this salad, but in Greece they usually served a thin slice of Feta on top of the salad.
  7. Put the tomatoes, cucumbers, bell peppers onions, and olives into a bowl and stir in enough dressing to moisten all the ingredients. (You may not need all the dressing.)
  8. Then gently stir in the feta cubes, season the salad with fresh ground black pepper to taste, and enjoy! 
  9. This salad tastes even better if you let it marinate for a few hours, and I found the leftovers to still be good even when it had been in the fridge a few days.

Make it a Low-Carb Meal:

Main dishes like Almond and Parmesan Baked Fish, Marinated Flank Steak, Grilled Shrimp Skewers, Baked Parmesan Crusted Chicken, or Greek Lemon Chicken would be taste great with this salad for a low-carb meal.

Ingredients

Salad Ingredients:

  • 1 cup grape tomatoes, cut in half lengthwise (see notes)
  • 1 large European cucumber (see notes)
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1/2 orange bell pepper
  • 1/2 cup pitted Kalamata olives, cut in half
  • 1/4 cup sliced green onion (optional)
  • 1/2 cup diced Feta cheese (or more)

Dressing Ingredients:

  • 1/2 cup Newman’s Own Olive Oil and Vinegar Dressing (see notes)
  • 1 tsp. dried oregano

Instructions

  1. Mix oregano into salad dressing, set aside.
  2. Cut tomatoes in half lengthwise, or dice garden tomatoes.
  3. Peel cucumber in strips, leaving some green stripes lengthwise. (For small garden cucumbers or Persian cucumbers you may not need to peel.) Cut cucumbers in half lengthwise, then in slices.
  4. Remove seeds from peppers and dice peppers in 3/4 inch square pieces.
  5. Slice green onion into 1 inch long pieces.
  6. Drain olives and cut in half lengthwise.
  7. Cut Feta into cubes about 1/2 inch square.
  8. Combine tomatoes, cucumbers, peppers, onions, and olives and toss with desired amount of salad dressing. (You may not need all the dressing.)
  9. Stir feta cubes into salad and season with fresh-ground black pepper.
  10. The salad can be served immediately, but I like it best when the ingredients marinate for an hour or two.
  11. This salad keeps surprisingly well in the refrigerator for a few days.

Notes

You can definitely use diced fresh garden tomatoes if you have some! If you don’t have a European Cucumber, just use 2-3 small regular or Persian cucumbers. I love Newman’s Own Olive Oil and Vinegar Dressing (affiliate link) but you can use any purchased vinaigrette that’s low in sugar.

Tomato Avocado Salad with Edamame

I love summer salads like this Tomato Avocado Salad with Edamame that has an amazing cumin-lime vinaigrette! And did you know that edamame is low in net carbs and high in protein!

This tasty Tomato Avocado Salad with Edamame is something I’d love to make over and over in the summer when fresh tomatoes are so good. And both edamame and avocado are healthy foods that always feel like a treat!

I first made this recipe years ago when frozen edamame was only available in the shell, at least at the stores where I shopped. But now I can get shelled edamame at Kroger near me, and they make it much easier to get this on the table. And recently I came across this recipe back in the archives and got inspired to make it again, and I think the new photos really show off the deliciousness of this combination!

If you’ve enjoyed edamame as an appetizer in a sushi restaurant, I bet you’ll enjoy them in this salad. And if you’re lucky enough to have fresh garden tomatoes, that will only make the salad better!

What is Edamame?

Edamame is the name for immature soybeans that are shelled out of the pod and then eaten, and they’re a favorite appetizer with Asian food. You can probably find shelled edamame, which I do highly recommend, and they are often sold frozen, near the frozen vegetables.

Is Edamame high in carbs?

Edamame does have some carbs, but it’s also very high in fiber. One cup of shelled edamame has about 13.8 carbs, but 8 grams of fiber, and edamame is also high in protein. Check out the nutritional information for edamame and you might be surprised.

How to store avocado so it stays good longer:

I used to look longingly at those big bags of avocados at Costco but never buy them because I couldn’t use that many avocados before they went bad. Then I learned that once avocados are ripe, if you keep them in the fridge they last for days and days without getting any softer. I wish I remembered who told me about this, because that bit of avocado storage information has changed my life.

How to Make Tomato Avocado Salad with Edamame:

  1. Dice the avocados, put in a bowl, then add fresh lime juice and stir until avocado pieces are all coated with lime.
  2. Drain thawed edamame into a colander placed in the sink. Pat dry with paper towels if needed.
  3. I took a photo of the edamame in a measuring cup to show you that a 12 oz. bag of frozen shelled edamame made almost exactly two cups of shelled edamame.
  4. Cut tomatoes in half so you have 2 cups of tomatoes.
  5. Slice green onions, more or less to taste.
  6. For an easy dressing I whisked together lime juice, olive oil, ground cumin, Spike Seasoning, and Vege-Sal (links are affiliate links).
  7. I love this dressing with lots of lime, but taste after you mix the dressing and see if you want to add a bit more olive oil.
  8. Mix together tomato and edamame and toss with the dressing. (You might not need all the dressing.)
  9. Then mix in avocado.
  10. Serve salad right away.
  11. This was surprisingly good when it had been in the fridge overnight, although I don’t think it would last more than one day.

Make it a Low-Carb Meal:

I would definitely eat this Tomato Avocado Salad with Edamame as just a whole-meal salad for a light lunch, but it would make a geat side dish for something like Grilled Fish with Lemon and Capers, Grilled Chicken Kabobs with Vegetables, or Marinated Grilled Flank Steak.

  5. Whisked together lime juice, olive oil, ground cumin, Spike Seasoning, and Vege-Sal (or a slightly smaller amount of salt) to make the dressing.\
  6. I loved this dressing with lots of lime, but taste after you mix the dressing and see if you want to add a bit more olive oil
  7. Mix together tomato and edamame and toss with the desired amount of dressing
  8. Then gently mix in the chopped pieces of avocado
  9. Serve salad right away, although this was surprisingly still quite good when it had been in the fridge overnight.

Notes

Twelve ounces of frozen shelled edamame is about 2 cups.

Tomato Avocado Salad with Edamame is a great option for low-carb or Keto diets with only 5 net carbs per serving! All the ingredients here do have some carbs, but they’re also loaded with nutritional benefits, and edamame has lots of fiber so it’s low in net carbs. This is also good or for any phase of the original South Beach Diet, although it might be a bit of a splurge on fat for South Beach.
