Cabbage, kale, shrimp, cilantro, peanuts, and creamy sweet miso dressing… I could eat this every day for lunch and be happy with my life. (And by could, I mean I currently am.)

We were actually planning to publish this later in the SOS Series, but I could not wait to get this into your hands because I’m so obsessed with it. So here she is, making an early entrance! This salad is so perfect for these early days of spring / summer when it’s starting to warm up and the grass is turning green again and the body is just feeling aggressively ready for salads.

So many of these salad ingredients are easy to buy pre-made / pre-ready to eat (I get a lot of them at Trader Joe’s):

  • pre-shredded cabbage
  • pre-chopped kale
  • cooked shrimp
  • chili onion peanuts

And this miso dressing can be blitzed up in about two minutes. It is creamy, sweet, springy, delicate, and just very life-giving. Just a little bit of garlic, but not overpowering, and the punch from the lime is the most delicious little jolt of wake-me-up energy that you want in a salad.

Description

This Miso Crunch Salad is made for springtime! Major crunch for veggies like cabbage and kale, a tiny bite of heat from chili-flavored peanuts, chilled shrimp, and the perfect sweet miso dressing. 


Miso Dressing:

  1. Shake all dressing ingredients in a jar, or blend together in a small food processor (affiliate link) until smooth. If it’s on the thicker side, add a bit of water until it pours smoothly off the end of a spoon.
  2. Toss all salad ingredients with dressing! You can do this as a large batch (serves 4-6) or prep the elements and store them separately to make the salads one at a time for individual lunches and dinners throughout the week, which is what I usually do! Crunchy, sweet, delicate, and fresh!

What Is Miso?

Miso is a fermented soybean paste that is used in Japanese cooking.

You can buy multiple varieties of miso – yellow, red, and white are the three I’m most familiar with. The one I’m using here and the one I’d recommend is white miso, which is very mild and almost sweet. It has a more delicate and nuanced flavor, which is so perfect in this salad.

I usually find it in the produce section of the grocery store, near the tofu!

What To Use Instead Of Miso?

Tahini could be a good substitute! It’s similarly creamy, but it’s less salty, so if you do use tahini (in equal proportions to the miso), I would recommend seasoning the dressing with extra salt or even a shot of soy sauce.

Other Protein Options?

Rotisserie chicken is great in this salad! I’ve done it many times.

Can It Be Vegan / Vegetarian?

Edamame is a great veg protein that I love throwing into this salad!

Any Other Veggies?

I have enjoyed spinach (in place of the kale), and finely chopped broccoli, cucumber, and bell pepper.

Making This Nut-Free?

You could use sunflower seeds (that’s what the Churchill Street miso crunch salad uses!) or wonton strips instead of the nuts!

How To Keep Leftovers?

The salad is best within the first 15-30 minutes after tossing it together! The greens and cabbage will start to lose some of their crunch after they sit in the dressing for a while. So if you’re serving it to a group, just toss it up, serve it fresh, and have everybody eat as much as possible. 🙂

On the other hand, if you’re eating this one serving at a time, it works really well to prep everything (dressing, shrimp, peanuts, cilantro, and greens) and have those elements in the fridge so you can throw this together as individual lunch portions throughout the week.

Make It Even Easier?

I can confirm that this is delicious with just a store-bought Asian-style dressing that is pumped up with some extra salt, extra sugar, and maybe even a spoonful of white miso. Kind of a hybrid homemade miso dressing, ya know? I made it the hybrid way for an Easter get-together and everyone raved about it!

This salad is a cousin to the avocado shrimp salad from years ago! The 2023 version – the one you see here – is more like a slaw, which I am totally loving! And the dressing skips the ginger.

I saw a Miso Crunch Salad on the menu at a restaurant near us called Churchill Street, and I wanted to replicate it, which is where this idea came from!

Garlic Shrimp and Tomatoes with Parmesan Orzo Recipe

How To Make This Garlic Shrimp and Tomatoes (with Pictures)

Step 1: Blister and Smash the Tomatoes

Get the tomatoes hot and blistery; then give ’em a gentle smash with the back of a spoon or a small plate. It’s… very fun.

Step 2: Cook the Shrimp

Make a little clearing right in the center of the tomatoes where you can add your shrimp to cook for a couple of minutes. Salt it up!

Step 3: Get the Garlic and Butter Going In There

Throw in a bunch of freshly sliced garlic and a knob of butter. Stir it up a few times until it’s dreamy.

Step 4: Make a Creamy Orzo

Put a lid on the shrimp and make a quick creamy orzo – butter, Parmesan, cream, lemon, and salt.

Step 5: Put It All Together

Piping hot orzo goes on the plate first, and then we pull our shrimp and tomatoes back out to pile on top.

This recipe is in heavy rotation at the moment – and it never fails to make me feel like I’m eating at a fancy restaurant and/or generally have my life together. Is my laundry all over my table? Yes. Have I been using dry shampoo for the last 4 days? Yes. But am I also eating a kind of fancy and beautiful dinner? YES! Three cheers for doable “fancy” recipes. 10/10 recommend.

Creamy orzo with the twang of Parmesan, sweet burst tomatoes gently bubbled into a sauce, and a pile of jumbo, delicate, buttery, garlic-laced shrimp. Pass me a glass of wine and I am living my best life.

As far as family approval goes, Bjork and I love the whole big, beautiful thing – no thyme for him (a true crime and I don’t want to spend any more time talking about it), and lots of thyme, salt, and pepp for me. The girls are hit and miss with the shrimp and tomatoes, but you better believe they love the creamy Parmesan orzo which is, of course, just mac and cheese in disguise. They’ll usually eat a few of the fresh little tomatoes on the side, too. Winning for everybody!

Description

Shrimp laced with buttery garlic and thyme and a burst tomato sauce served on a creamy Parmesan orzo.


Garlic Shrimp and Tomatoes:

Creamy Orzo:


  1. Cook the Orzo: Cook according to package directions. Drain, toss with a bit of oil, and set aside.
  2. Soften the Tomatoes: Add the tomatoes and olive oil to a pan over medium high heat so they can soften and get a bit blistered on the outside. I usually cover the pan to avoid extra splatters.
  3. Smash the Tomatoes: Once they’re soft (5 minutes or so), give them a gentle smash with the back of a spoon or applying even pressure with a plate or similar flat object. You want the tomatoes to be partially burst / smashed so they release some juices.
  4. Cook the Shrimp: Make a little clearing in the center of the tomatoes and add your shrimp right in; season them with 1/2 teaspoon salt and cook for 2 minutes on each side.
  5. Give it Some Flava-Flave: Add the garlic, butter, and 1/2 teaspoon salt to the pan and stir to mix it all together. Let it get saucy and bubbly; then remove from heat and cover with a lid.
  6. Make the orzo: Mix the orzo with butter, half and half, Parmesan, and lemon. Stir to combine; warm it up over the heat if necessary.
  7. Pile it up: Serve immediately so the orzo doesn’t get too starchy and sticky! Pile it on a plate with a big scoop of steamy shrimp and tomatoes. Top with thyme. So good!

Notes

This amount usually makes enough for just Bjork and I to finish the shrimp, with plenty of orzo for us and the girls. If you wanted to serve 4 adults, I would use 2 pounds of shrimp!

Frequently Asked Questions For Garlic Shrimp and Tomatoes

What can I use instead of shrimp?

Chicken would be delicious! I would probably pan-fry the chicken first, then take it out and set aside while you build your tomato sauce, then add the chicken back in at the end.

How long do the leftovers last?

You can definitely eat this meal as leftovers for 1, maybe 2 days after you make it, but it’s one of those meals that really shines when it’s made fresh.

Can you make this vegetarian / meatless?

Use zucchini in place of the shrimp! Or, similarly, this recipe is great.

How do you make this gluten-free and/or dairy-free?

Use gluten free orzo, dairy-free butter (or olive oil), and something else creamy in place of the half and half and Parmesan – a knob of dairy-free cream cheese would be good!

Another option would be to skip the creamy orzo and serve this with quinoa or another gluten-free, dairy-free option.
